The closest I’ve ever been to tasting El Bulli’s food was at Tapaç 24, helmed by executive chef Carles Abellan who worked with Adria for 10 years, last June.
There, we had the most expensive grilled cheese sandwich in our lives. But the 4 little squares were so damn glorious: truffle oil, farmers cheese, ham, & shaved black truffles all perfectly grilled. We still talk about the “bikinis” til this day.
