It wasn’t easy to find the exec pastry chef’s name even after researching La Palme D’or. From this 2006 article, it appears Kei Taniguchi was a pastry chef when this patisserie at the Ala Manoa center opened back when. However, upon further reading, and via Yelp entries, Edwin Goto, a famed Honolulu chef who helms the Mauna Lani Hotel now runs the pastry program at La Palme D’or.
La Palme D’or is most well known as the Golden Palm awards handed out at Cannes. Not really sure how this relates to a haute patisserie joint in the middle of a huge Honolulu mall but… let’s cut to the chase:
That cream puff? Finer than anything coming out of Liliha’s or Leonard’s, even if it’s not haupia flavored. It’s better than cream puffs I had in Paris. Perfect cream puffy texture, milky custard filling devoid of article flavors. Whoever Chef Goto is… I kowtow before you.
