
Ripened tomatoes have equal amounts of free glutamates as scallops. September is peak tomato season; Blue Hill at Stone Barns went nuts with tomatoes. And why not? It offers a cheap glutamates rush without retribution.
Here comes 2 amuse of tomatoes: Stone Barns V8 & Tomato Slider. While the tomato slider may have been the least exciting of burgers ever, the Stone Barns V8 was a gem. All 8 veggies came fresh from the farm and it was easy to taste the earthiness of it all. Cucumber, tomato, celery, etc, were all used, but the tomato, tho not overpowering, prevails. It was a brilliant V8, without the saltiness, with all the natural glutamate you ever wanted to drink in a shot glass. Fun.

Beyond the amuse, it’s time to go walk around the farm. While, again, these do not rival anything from peden+munk, they do give a sense what constitutes Stone Barns.
