Based on the yelp listing pix, the bowl with the thin noodles looks very similar to A&J in Cupertino and perhaps Irvine. A&J I know has a “fresh” thicker noodle that looks like the one you ordered, and yes more QQ than the limpy weak thin counterparts. I wonder if the chef worked at A&J before or this style of beef stock enhanced with spices, soy sauce, and thin golden chili oil is of a particular style. Good writeup!
